The way we used to make it was swiss role/sponge soaked in sherry cover with mixed fruit. pour some jelly (jello for our American friends) over the sponge. Leave it to set. Then pour over a layer of custard leave to set in the fridge then top with whipped double cream and cherrys of chocolate chips or whatever you like. Theres loads of different versions of trifle
of course i cant eat this version now because of the Jello (I'm a vegetarian) also I don't like cold custard I used to have it without.
